Crispy Meatball Flatbread

Crispy Meatball Flatbread
2 (1/2 -inch thick) slices red onion
16 red and yellow cherry or grape tomatoes
1 Mama Mary's Stone Fired Pizza Crust, quartered
Olive oil cooking spray
20 fresh ciliegine mozzarella balls (in our Deli)
4 tbsp. pesto
1 (8- oz.) package Wildwood Sprouted Meatballs, halved
2 tbsp. grated Parmesan cheese
Snipped fresh basil (optional)

Prep: 10 minutes, Cook: 20 minutes, Serves: 4

1. Coat onion, tomatoes and pizza crust on both sides with cooking spray. Grill onion over medium heat for about 3 minutes on each side or until nicely charred and soft. Grill tomatoes and crust for about 1 minute on each side.

2. Tear mozzarella into small pieces and place on pizza crusts. Top with pesto, meatballs, tomatoes and Parmesan, in that order. Grill over indirect heat for 5 minutes more or until cheese is melted. Sprinkle with basil, if you like.
