Irish Artichoke Veggie Burgers

Irish Artichoke Veggie Burgers
1 small leek, halved lengthwise
1 (6- oz.) package Wildwood Organic Original Veggie Burgers*
Olive oil cooking spray
1/4 cup shredded Kerrygold Dubliner Cheese (in our Deli)
2 potato hamburger buns
1/4 cup Nob Hill Trading Co. Artichoke Dip
2 medium butter lettuce leaves
2 large slices tomato

Prep: 10 minutes, Cook: 15 minutes, Serves: 2 

1. Coat leek and veggie burgers with cooking spray; grill over medium heat for 2 to 3 minutes or until lightly charred. Turn and top burgers with cheese; cook until cheese is melted. Remove leeks and let cool slightly, then thinly slice.

2. Lightly grill hamburger buns. Spread artichoke dip on bun bottoms and top with lettuce and tomato. Top each with a burger, sliced leeks and bun tops.

*May substitute your favorite veggie burger.
