Warm Potato Salad with Steakhouse Dressing

Warm Potato Salad with Steakhouse Dressing
Ingredients
16 small Yukon Gold or red potatoes, halved
Olive oil cooking spray
1 red bell pepper, seeded and quartered
1 (8- oz.) package Sweet Earth Traditional Seitan
1 cup sliced green onions
2/3 cup Girard's Champagne Dressing or White Balsamic Vinaigrette
1/4 cup vegetarian steak sauce (such as A.1. Sauce)
1 tbsp. chopped fresh basil
1 tbsp. chopped Italian parsley
Directions

Prep: 10 minutes, Cook: 15 minutes, Serves: 4

1. Place potatoes in a large bowl. Cover and microwave on HIGH for 5 minutes or until almost fully cooked.

2. Coat potatoes, bell pepper and seitan with cooking spray. Grill potatoes and bell pepper for a few minutes on each side over medium heat until lightly charred and potatoes are cooked through. Grill seitan for 1 minute on each side. Cut pepper and seitan into bite-size strips.

3. Stir together dressing and steak sauce in a large bowl. Add seitan and vegetables and toss well to coat. Sprinkle with basil and parsley.
