Avocado Sriracha

Avocado Sriracha "Bacon" Lettuce and Tomato Sandwiches
4 Raley's bolillo rolls (in our Bakery), halved lengthwise
8 slices vegetarian bacon
1 avocado, peeled, pitted and mashed
2 cups baby arugula
8 slices heirloom tomato
1/4 small red onion, thinly sliced
4 to 8 tbsp. Srirach Just Mayo

Prep: 10 minutes, Cook: 1 to 2 minutes, Serves: 4

1. Grill bread and bacon over medium heat for 1 to 2 minutes or until lightly browned.

2. Spread equal amounts of avocado on roll bottoms and top with arugula, tomato, onion and bacon.

3. Spread mayo on roll tops and close sandwiches.
