Grilled Pizza Potatoes

Grilled Pizza Potatoes
32 slices pepperoni (turkey or traditional)
20 small red or Yukon Gold potatoes
3 tbsp. olive oil
1 tsp. Italian blend seasoning
1/2 tsp. garlic salt
2 tbsp. grated Parmesan cheese, plus additional for topping
Warm marinara sauce for dipping

For a vegetarian main dish, substitute cubes of firm cheese for the pepperoni.

Prep: 15 minutes, Cook: 20 minutes, Serves: 4 

1. If cooking at home, microwave potatoes for 10 minutes to cook almost all the way through. If cooking at the campsite, wrap potatoes in foil and grill over low heat for 20 minutes. Let cool slightly.

2. Thread pepperoni and potatoes onto long campfire grilling sticks, sandwiching 2 pepperoni slices between each potato (this will keep the pepperoni from falling off). Stir together oil, seasonings and cheese in a small bowl and brush or drizzle a small amount over potatoes. Hold over campfire until potatoes are browned and toasty, tipping up slightly to keep ingredients from sliding off sticks, brushing again with oil mixture halfway through grilling.

3. Serve with marinara for dipping and additional Parmesan cheese, if you like.
