Chipotle Chicken Crisps
24 triangular tortilla chips
1 cup chopped rotisserie chicken
1 cup Raley's Shredded Mexican Blend Cheese
3/4 cup Raley's Pico de Gallo
2 tbsp. Art of Chipotle Gourmet Paste with Adobo
sour cream (for garnish)
guacamole (for garnish)
fresh cilantro leaves (for garnish)

Prep: 10 minutes, Cook: 5 to 7 minutes, Makes: 24 appetizers

1. Preheat oven to 400°F. Place tortilla chips in a single layer on 2 baking sheets. Stir together chicken, cheese, pico de gallo and chipotle paste; spoon equal amounts onto each tortilla chip.

2. Bake for 5 to 7 minutes or until cheese is melted. Garnish with a tiny dollop of sour cream and guacamole, then top with a cilantro leaf.
