Seafood Cocktail with Oysters, Shrimp and Squid

Seafood Cocktail with Oysters, Shrimp and Squid
Ingredients
2 large tomatoes, diced
1/2 small red onion, thinly sliced
1/4 cup sliced pitted green olives
3 tbsp. Raley’s Olive Oil
1 tsp. ground cumin
1 tbsp. chopped fresh oregano
3 shakes Tabasco sauce
Juice from 1 lime
Salt and pepper to taste
10 oysters, shucked and juice reserved
1/2 lb. cooked, peeled and deveined large shrimp (tails removed), cut into thirds
1/2 lb. cooked squid, cut into strips
1 avocado, diced (garnish)
2 tbsp. chopped cilantro garnish)
Tortilla chips
Directions

Prep: 40 minutes, Serves: 4

Mix together tomatoes, onion, olives, olive oil, cumin, oregano, Tabasco and lime juice in a large bowl. Season with salt and pepper to taste, then stir again.

2. Gently fold in oysters and reserved juice, shrimp and squid into mixture. Garnish with avocado and cilantro, then serve with tortilla chips.
