Crunchy Chicken Strips with Cheesy Black Bean Dip
Ingredients
Chicken:
2 cups finely crushed Raley's Roasted Veggie Tortilla Chips
1/2 cup Raley's Shredded Mexican Blend Cheese
1 tsp. Tajin Clasico Seasoning (in our Produce Dept.)
1½ lbs. Raley's boneless, skinless chicken breasts
2 Raley's eggs, beaten
Olive oil cooking spray

Black Bean Dipping Sauce:
1 (15- oz.) can Raley's Black Beans
2/3 cup Raley's California Fire Roasted Salsa
1/2 cup Raley's Shredded Mexican Blend Cheese
1/2 tsp. Tajin Clasico Seasoning
1 jalapeno pepper, stemmed and seeded
Directions

Kid-friendly and easy to prepare ahead, this makes a great weeknight meal.

Prep: 20 minutes, Cook: 20 minutes, Serves: 4

1. Preheat oven to 400°F and line a large baking sheet with foil. Stir together chips, cheese and seasoning in a medium bowl. Cut chicken into 3-by-1-inch strips and dip in eggs. Roll in chip mixture, pressing layer into chicken. Place on baking sheet and coat liberally with cooking spray. Bake for 20 minutes, coating again with spray halfway through cooking.

2. While chicken is cooking, puree all sauce ingredients in a food processor or blender. Heat for a few minutes on the stove or in the microwave until hot. Serve with hot chicken strips.
