Bourbon and Coke Meatloaf

Bourbon and Coke Meatloaf
2 onions, finely diced
1 bunch celery, finely diced
1 clove garlic, minced
1 tbsp. Creole seasoning
1 tbsp. Raley's Canola Oil
5 Raley's Large Eggs, lightly beaten
2½ lbs. Raley's ground beef
1/2 lb. ground pork
1½ cups panko breadcrumbs
3/4 cup Raley's Ketchup
1/3 cup Coke
1/3 cup bourbon
1 tbsp. Worcestershire sauce
1½ tsp. kosher salt
1¼ tsp. black pepper

2 cups Raley's Ketchup
1/2 cup Raley's Brown Sugar
1/2 cup soy sauce

Prep: 40 minutes, Cook: 1 hour, Serves: 5 to 6

1. Preheat oven to 350˚F and spray an 18X13 baking sheet with nonstick cooking spray.

2. Sauté onions, celery, garlic and Creole seasoning in oil for 5 minutes over medium-high heat or until almost caramelized. Let cool, then mix with remaining meatloaf ingredients in a large mixing bowl. Divide the meatloaf into two equal parts and form each one into a loaf. Place onto prepared sheet and bake for 45 minutes.

3. While meatloaf is cooking, stir together all glaze ingredients in a mixing bowl. Pour evenly over tops of meatloaves. Bake for 15 minutes more or until internal temperature reaches 165˚F.
