Green Papaya Salad

Green Papaya Salad
1 Thai chili pepper (add more or less depending on your spice level)
1 clove garlic
1 tbsp. Raley's Sugar
1/4 tsp. salt
1/8 cup Raley's Roasted Peanuts (optional)
5 cherry tomatoes, sliced in half
1 tbsp. lime juice
3 cups shredded green papaya (about 2 medium papayas)
1 cup thinly sliced cabbage (optional)

Prep: 15 minutes, Serves: 2

1. Add pepper, garlic, sugar and salt to a mortar and pound with a pestle until well smashed. Add peanuts if you like, then pound into a chunky paste. If you don’t have a mortar and pestle, mince garlic and smash peanuts with a meat mallet, then combine all ingredients in a mixing bowl and mix well.

2. Add tomatoes and lime juice and mix well. Add papaya and gently pound ingredients together. Flip the mixture using a large spoon, then pound and flip several times until well mixed. Season to taste with salt. If you don’t have a mortar and pestle, gently massage papaya with the dressing mixture.

3. Serve garnished with cabbage, if you like.
