Butternut Celery Root Grilled Cheese

Butternut Celery Root Grilled Cheese
Ingredients
1 cup coarsely shredded butternut squash
1 cup chopped onion
1/2 cup coarsely shredded celery root
2 tbsp. Sunnyside Farms Butter
8 diagonally cut slices Pugliese or other rustic bread (in our Bakery).
1½ cups shredded Kerrygold Skellig Cheese (in our Deli)
Directions

Prep: 20 minutes, Cook: 20 minutes, Serves: 4

1. Sauté butternut squash, chopped onion and coarsely shredded celery root in butter in a medium skillet for 10 minutes or until soft.

2. Spread butter onto one side of diagonally cut slices Pugliese or other rustic bread (in our Bakery). Place equal amounts of vegetables and shredded cheese between bread slices.

3. Cook in a large skillet over medium heat for 5 minutes on each side or until bread is golden and cheese is melted.
