Sweet Pumpkin Ravioli

Sweet Pumpkin Ravioli
2 cups Raley’s Flour
1/4 cup Raley’s Sugar
1/2 tsp. McCormick Pumpkin Pie Spice
2 Raley’s Eggs
Pumpkin Cream Sauce:
1/4 cup Sunnyside Farms Butter
1-1/2 tbsp. Raley’s Flour
1 cup heavy cream
1/4 cup pure maple syrup
1/4 cup Raley’s Sugar
1 tsp. vanilla extract
1/2 tsp. McCormick Pumpkin Pie Spice
Pumpkin Filling:
1 cup canned pumpkin
1 (8-oz.) container mascarpone cheese (in our Deli), softened
1/4 cup Raley’s Sugar
1 tsp. vanilla extract
1/2 tsp. McCormick Pumpkin Pie Spice
Chopped toasted walnuts
Powdered sugar (optional)

Sweet and crunchy and creamy in every decadent bite.

Prep: 45 minutes, Stand: 15 minutes
Cook: about 20 minutes, Serves: 8

1. To prepare pasta dough, place flour, sugar and pumpkin pie spice in a food processor; pulse to mix. Add eggs and process to form a smooth dough, adding a teaspoon or so of water if needed. Cover and let rest for 15 minutes or up to 2 hours.

2. Using a portion of the dough at a time, roll out as thin as possible on a floured board. Cut into 3½-inch circles, rerolling scraps as necessary to make 24 circles.

3. To prepare sauce, melt butter over low heat in a small saucepan. Stir in flour and cook for 1 minute. Slowly stir in cream and cook until smooth. Add syrup, sugar, vanilla and spices; simmer for a few minutes more over low heat to thicken slightly. Keep warm.

4. To prepare filling, place pumpkin in a small skillet. Cook over medium heat for 5 minutes or until very thick, stirring frequently; let cool. Place in a medium bowl with remaining ingredients and stir until well blended.

5. Place spoonfuls of filling in the center of each dough circle, being careful not to overfill. Brush edges with water to moisten and fold over to enclose. Pinch edges firmly to seal.

6. Cook ravioli in boiling water for 3 minutes or until they begin to float; drain on a paper towel lined baking sheet. Fry in several inches of hot oil for a few minutes or until golden brown. Drain and place on 8 plates; drizzle with warm sauce and sprinkle with walnuts. Dust with powdered sugar, if you like. Serve hot.
