Turkey Bacon Ranch Stuffed Mini Peppers

Turkey Bacon Ranch Stuffed Mini Peppers
1 cup 1/4-inch cubes smoked turkey
3 tbsp. corn
3 tbsp. Opa By Litehouse Greek Yogurt Ranch Dressing
2 tbsp. sliced green onions
2 tbsp. bacon bits or crumbled bacon
6 large sweet mini peppers

Fresh, raw corn cut from the cob adds a great crunchy taste, but you can substitute frozen or canned corn.

Prep: 15 minutes, Serves: 2

1. Stir together all ingredients except peppers in a medium bowl.

2. Cut tops off peppers and remove any seeds. Spoon turkey salad into peppers and lightly press in to fill. Cover and refrigerate until ready to serve.

Tip: Try cutting peppers in half lengthwise, stuff with turkey salad and serve over fresh greens.
