Mandarin, Cranberry and Goat Cheese Stuffed Endive

Mandarin, Cranberry and Goat Cheese Stuffed Endive
Ingredients
3 tbsp. fresh cranberries
1/2 tsp. Raley's Sugar
3 mandarins, peeled and chopped
1 tbsp. minced red onion
1 tsp. fresh thyme leaves
5 oz. soft goat cheese
16 large Belgian endive leaves
2 tbsp. finely chopped toasted walnuts
Directions

Prep: 10 minutes, Serves: 8

1. Chop cranberries and toss with sugar in a medium bowl.

2. Stir in peeled and chopped mandarins,  red onion and thyme leaves.

3. Spoon soft goat cheese into endive leaves and top with mandarin mixture. Sprinkle with walnuts and garnish with additional fresh thyme, if you like.
