Gingered Spinach Apple Salad

Gingered Spinach Apple Salad
Ingredients
3 tbsp. extra virgin olive oil
2 tbsp. sherry vinegar
2 tbsp. honey
1/2 tsp. sea salt
freshly ground pepper to taste
3/4 cup quartered and thinly sliced red onion
1 medium red or green apple, cored and cut into bite-size pieces
1 (5 oz. package) baby spinach
1/2 cup toasted chopped walnuts
2 tbsp. chopped The Ginger People Crystallized Ginger Chips.
Directions


Prep: 15 minutes Marinate: 10 minutes Serves: 4

1. Whisk together olive oil, sherry vinegar, honey, sea salt and freshly ground pepper to taste in a large bowl.
2. Stir in red onion and apple, and let marinate for 10 minutes.
3. Add baby spinach to bowl and toss well. Sprinkle with walnuts and ginger chips.
