Grilled Pancetta Cheese Sandwiches with Cranberry Fig Compote

Grilled Pancetta Cheese Sandwiches with Cranberry Fig Compote
Ingredients
3/4 cup fresh cranberries, coarsely chopped
1/3 cup fig jam or fig spread (in our Deli)
1 (3 oz.) package sliced pancetta (in our Deli)
8 (1/2-inch) thick slices Nob Hill Trading Co. Pugliese bread, cut on the diagonal
(in our Bakery)
2 tbsp. Sunnyside Farms Butter
4 oz. D’Affinois or Brie cheese (in our Deli), sliced
Fresh basil leaves
Directions

Prep: 15 minutes Cook: about 17 minutes Serves: 4


1. Place cranberries and fig jam or spread in a small saucepan; let simmer for 5 minutes.
2. Place pancetta on a microwave-safe plate in a single layer. Microwave on HIGH for 2 minutes or until very crisp.
3. Spread one side of each bread slice with butter. Place 2 slices, buttered side down, in a very large skillet and top with equal amounts cranberry mixture, cheese and pancetta. Top with basil and remaining bread and cook over medium heat for 5 minutes on each side or until bread is golden brown.
