Irish Caramelized Leek Dip

Irish Caramelized Leek Dip
2 tbsp. Sunnyside Farms Butter
2 very large leeks, well rinsed and thinly sliced (white and pale green parts)
2 large shallots, thinly sliced
1 (7- oz.) package Kerrygold Dubliner Cheese (in our Deli), coarsely chopped
1½ cups Sunnyside Farms Sour Cream
1 tbsp. Sierra Nevada Porter or Ale Mustard
1½ tsp. sliced fresh sage
2 cloves garlic, minced
Freshly ground pepper to taste
Thicker potato chips for dipping (we like Good Health Avocado Oil Kettle Chips)

Prep: 15 minutes, Cook: 15 minutes, Chill: 1 hour, Serves: 8  

1. Melt butter in a large skillet. Add leeks and shallots and cook for 15 minutes, stirring frequently, until very soft and golden brown. Let cool.

2. Place cheese in a food processor and pulse on and off to finely chop. Add leek mixture, sour cream, mustard, sage and garlic; pulse on and off to mix well. Season with pepper.

3. Cover and chill until ready to serve. May be prepared several days in advance. Serve with potato chips.
