Cider Brined Smoked Turkey Breast

Cider Brined Smoked Turkey Breast
2-1/2 cups Barsotti's Apple Cider, divided
1/3 cup sea or kosher salt
1/4 cup packed Raley's Brown Sugar
1-1/2 cups cold water
1 tsp. peppercorns, lightly crushed
8 (4-inch long) stems fresh rosemary lightly crushed between your fingers
4 cloves garlic, thinly sliced
2 bay leaves
1 large onion, thinly sliced
1 whole turkey breast, bone removed

Pounding turkey breast to a uniform thickness makes it cook evenly and makes it easier to slice as well.
Prep: 30 minutes Brine time: 1 to 2 days Cook: 2 to 3 hours
Serves: 8

1. Bring 1 cup cider to a boil in a saucepan. Add salt and sugar and stir until both have dissolved. Stir in remaining cider and let cool.
2. Pour into a large plastic bag with water, peppercorns, rosemary, garlic, bay leaves and onion. Squeeze bag gently to mix. Set into an extra-large resealable bag in a larger container. Add turkey and seal bag. Refrigerate for 1 to 2 days.
3. Rinse turkey breast and place in a clean extra-large resealable bag or place on a large board and cover with a double layer of plastic wrap. Pound with a meat mallet to 1½ inches thick end to end.
4. Grill brined turkey breast over indirect heat for 1 hour with full smoking wood chips. Move to direct heat and cook over medium-low heat until nicely charred and turkey reaches 160°F on a meat thermometer.
5. Tent with foil and let stand for 30 minutes before carving.

Roasted Turkey Breast
Preheat oven to 350°F. Place turkey breast in a large shallow roasting pan and roast for 1 hour or until turkey reaches 160°F
on a meat thermometer.
Brined Whole Turkey
Triple or quadruple brine, depending on the size of your turkey. If there’s no room to keep well-chilled in your refrigerator, place in a large, clean garbage bag set into a large cooler with lots of ice. Check ice often to make sure it hasn’t melted.
