Cheese and Chip Cups

Cheese and Chip Cups
1 cup Raley's Shredded Sharp Cheddar Cheese
1/2 cup finely crushed Raley's Purely Made Multigrain Tortilla Chips
1 tsp. Tajin Clasico Seasoning
2 tbsp. guacamole
2 tbsp. Raley's Fresh Pico de Gallo, chopped into smaller pieces
Snipped fresh cilantro

Prep: 10 minutes, Cook: 8 to 10 minutes, Makes: 24 appetizers

1. Preheat oven to 400°F and spray 24 mini muffin cups with olive oil cooking spray. 

2. Stir together cheese, chips and seasoning in a medium bowl. Place equal amounts into each muffin cup and bake for 8 to 10 minutes or until light golden brown in color. When cool enough to handle but still warm, carefully remove with the pointed end of a small knife.  

3. Place on a serving platter and top with a small dollop of guacamole, a sprinkle of pico de gallo and snipped fresh cilantro.
