Squash and Peanut Soup

Squash and Peanut Soup
2 tbsp. Raley's Vegetable Oil
5 cups butternut squash, peeled and cut into cubes
1 tsp. ground cumin
1/2 tsp. ground coriander
2 cloves garlic, minced
1 large onion, peeled and diced
5 cups Raley's Chicken Broth
3/4 cup creamy peanut butter
2 tbsp. Raley's Tomato Paste
1/4 cup chopped fresh cilantro
Raley's Salt and pepper to taste
1 serrano pepper, minced

Prep: 15 minutes, Cook: 30 minutes, Serves: 6

1. Heat oil in a large saucepan over medium heat. Add butternut squash, seasonings, garlic and onion; cook until tender. Add broth, peanut butter and tomato paste. Bring to a boil.

2. Reduce heat and simmer, covered, for 20 minutes or until squash is tender. Add cilantro and season with salt and pepper. Garnish with serrano pepper.
