Swedish Meatballs with Herbed Yogurt

Swedish Meatballs with Herbed Yogurt
3 tbsp. Sunnyside Farms Butter
1 medium onion, minced
1 lb. Raley's Ground Beef
1 lb. ground pork
1 cup breadcrumbs
1/2 cup half & half
1 tbsp. honey
1/2 tsp. allspice
2 Raley's Eggs, beaten
Raley's Salt and pepper to taste
Raley's Vegetable Oil for cooking

Herbed Yogurt:
2 cups Greek yogurt
2 tbsp. chopped parsley
1 tbsp. chopped chives
1 clove garlic, minced
Zest and juice from 1 lemon

Try serving these classics the traditional way – with boiled potatoes and cranberry sauce.

Prep: 15 minutes, Cook: 1 hour, Serves: 4

1. Preheat oven to 350˚F. Heat butter in a large skillet over medium heat; add onions and sauté until tender. Set aside to cool.

2. Mix together cooled onions, beef, pork, breadcrumbs, half and half, honey, allspice, eggs, salt and pepper in a large bowl. Using wet hands, form into 2-inch round balls.

3. Heat vegetable oil in a skillet over medium heat and cook meatballs in small batches until golden brown. Place meatballs on a baking sheet. When all meatballs are browned, bake for 10 minutes.

4. While meatballs are baking, stir together all herbed yogurt ingredients in a mixing bowl. Serve with meatballs.
