Lemon Thyme Corn with Bacon, Panko and Parmesan

Lemon Thyme Corn with Bacon, Panko and Parmesan
6 strips thick cut bacon
1 very large onion, chopped
6 ears fresh corn, kernels cut from cob
1 cup diced red bell pepper
1 (10-oz.) package Raley’s Chefs’ Menu Lemon Garlic Sauce (in our Meat Dept.)
fresh thyme leaves
Freshly ground sea salt and pepper to taste
3 tbsp. grated Parmesan cheese
3 tbsp. panko breadcrumbs

This takes a bit more time but it’s well worth it. The crunchy topping makes this dish even more special.

Prep: 30 minutes  Cook: 30 minutes  Serves: 12

1. Cook bacon in a large skillet until crisp; remove and drain on paper towels and coarsely crumble.
2. Add onion to skillet and cook for 5 minutes, stirring frequently. Add corn and cook for
5 minutes more.
3. Stir in bell pepper, Lemon Garlic Sauce, thyme and bacon; cook until heated through. Season with salt and pepper. Transfer to a lightly buttered 13 X 9-inch baking dish.
4. Stir together Parmesan and breadcrumbs and sprinkle over corn. Broil for 1 to 2 minutes or until top is crunchy and golden brown.
