Coconut Curry Shrimp

Coconut Curry Shrimp
1 cup Raley's Cioppino Seafood Sauce
1/3 cup coconut milk
1/2 tbsp. soy sauce
1 tsp. curry powder
1/2 tsp. Gourmet Garden Lemongrass Paste (in our Produce Dept.)
1 lb. large peeled and deveined shrimp
1 tbsp. Raley's Vegetable Oil
Jasmine rice (optional)
Snipped fresh chives (garnish)
Lime wedges (garnish)

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Stir together cioppino sauce, coconut milk, soy sauce and curry powder in a small saucepan. Simmer over low heat for 10 minutes, then stir in lemongrass paste.

2. Cook shrimp in oil in a medium skillet until fully pink. Pour sauce over shrimp. Serve over jasmine rice, if you like, and garnish with snipped fresh chives and lime wedges.
