Chocolate, Dried Cherry and Toasted Almond Stollen

Chocolate, Dried Cherry and Toasted Almond Stollen
2¼ cups Raley's Flour
1/2 cup Raley's Sugar
1½ tsp. baking powder
3/4 tsp. Raley's Salt, divided
8 tbsp. cold Sunnyside Farms Butter
1 cup ricotta cheese
1 tsp. vanilla extract
1 large Raley's Egg
Zest from 1 lemon
1 cup Raley's Semi-Sweet Chocolate Chips
1 cup dried cherries, chopped
1 cup toasted almonds, chopped
5 tbsp. Sunnyside Farms Butter, melted
1 cup Raley's Powdered Sugar

Prep: 25 minutes, Cook: 40 minutes, Makes: 2 loaves

1. Preheat oven to 325˚F and grease a baking sheet. Mix together flour, sugar, baking powder and 1/2 tsp. salt in a mixing bowl. Cut cold butter into chunks and incorporate into the flour mixture using your hands, mixing into small crumbs.

2. Stir together ricotta, vanilla, egg and lemon zest in a separate bowl. Add chocolate chips, cherries and almonds. Combine wet ingredients into the flour mixture, stirring until well combined.

3. Knead dough three times and shape into an 8 x 7-inch oval about 1/2 inch thick. Cut in half, then fold over each piece of dough roughly in half, leaving edge of top half about 1/2 inch short of edge of bottom half. Press dough to seal any open edges. Place onto baking sheet and bake for 40 minutes.

4. Remove from oven and let cool. Brush top with melted butter, then dust with powdered sugar and remaining 1/4 tsp. salt.
