Blueberry Jelly Doughnut Holes

Blueberry Jelly Doughnut Holes
4 cups peanut or vegetable oil for frying
2 cups Raley's Flour
3 tbsp. Raley's Sugar
1½ tbsp. baking powder
1/2 tsp. Raley's Salt
1/2 tsp. ground cinnamon
1 cup lukewarm Bayview Farms Whole Milk
1/4 cup Sunnyside Farms Butter, melted
1 Raley's Egg
2 tsp. vanilla extract
1 cup blueberry preserves
1/2 cup Raley's Powdered Sugar

Prep: 10 minutes, Cook: 40 minutes, Serves: 8

1. Heat peanut oil to 350˚F in a large skillet.

2. Whisk together flour, sugar, baking powder, salt and cinnamon in a large bowl. Whisk together milk, butter, egg and vanilla in a medium bowl. Stir wet ingredients with dry ingredients until batter becomes thick.

3. Scoop batter with a 1-inch ice cream scoop into hot oil. Fry in batches for 2 minutes on each side or until golden brown. Transfer doughnuts to a lined baking sheet to cool.

4. When doughnuts are cooled, fill a squeeze bottle or pastry bag with blueberry preserves. Insert tip into each doughnut hole and squeeze to fill with preserves. Dust with powdered sugar.
