Cranberry S’mores

Cranberry S'mores
1 vanilla bean
1 cup Chefs' Menu Cranberry Sauce
16 graham cracker squares, divided
128 white chocolate chips, divided
72 mini marshmallows, divided

Prep: 15 minutes, Cook: 12 minutes, Serves: 8

1. Split vanilla bean in half lengthwise. Place one half in a small saucepan with cranberry sauce. Bring to a boil and simmer over low heat for 10 minutes to thicken, stirring occasionally. Remove vanilla bean.

2. Spread equal amounts onto 8 graham cracker squares and top each with 16 white chocolate chips. Place 9 mini marshmallows on 8 more graham crackers. Place all on a baking sheet and bake at 400°F for 2 minutes or until chocolate is melted and marshmallows are browned.

3. Sandwich together cranberry and marshmallow crackers.
