Cuban Roasted Pork Shoulder with Mojo Sauce

Cuban Roasted Pork Shoulder with Mojo Sauce
1 (5- lb.) Raley's bone-in pork shoulder or pork butt roast
3 tbsp. olive oil
2 tbsp. dried oregano
2 tbsp. ground cumin
2 tbsp. chopped parsley
1 tbsp. dried chili flakes
8 cloves garlic, minced
Juice of 1 lemon
Raley's Salt and pepper to taste

Mojo Sauce:
1 cup Bayview Farms Orange Juice
1/4 cup olive oil
4 limes, juiced
3 cloves garlic, minced

Prep: 25 minutes, Cook: 2 hours, Serves: 8 to 10

1. Preheat oven to 450˚F. Place pork in a large roasting pan.

2. Stir together oil, seasonings, garlic and lemon juice in a mixing bowl. Rub pork with mixture, then season with salt and pepper. Roast for 2 hours or until center reaches 145°F on a meat thermometer.

3. Stir together all mojo sauce ingredients in a bowl. Season with salt and pepper and serve with roasted pork.
