Turkey Meatballs with Cranberry Relish and Fried Sage

Turkey Meatballs with Cranberry Relish and Fried Sage
2 lbs. Jennie-O Ground Turkey
1 cup rolled oats
1/2 cup dried cranberries, chopped
3 tbsp. chopped fresh sage
2 tbsp. chopped fresh parsley
2 cloves garlic, minced
1 carrot, minced
1 rib celery, minced
1 small onion, minced
1 Raley’s Egg

1 (12-oz.) bag frozen cranberries
1/2 cup Raley’s Sugar
1/2 cup water
1 tsp. Raley’s Salt
Juice and zest from 1 orange

Fried Sage:
4 tbsp. Raley’s Vegetable Oil
1/2 cup fresh sage
Raley’s Salt to taste

 Prep: 15  minutes  Cook: 35 minutes  Serves: 4 to 6 

1. Preheat oven to 350˚F. Line a baking sheet* with foil and set aside.
2. Stir together all meatball ingredients in a mixing bowl until well mixed. Roll into 2-inch meatballs and place on baking sheet; bake for 35 minutes.
3. While meatballs are baking, cook all relish ingredients in a large pot over low heat for 20 minutes. Remove from heat; let cool.
4. Heat oil in a medium pan over medium heat. Add sage; cook for 1 minute. Drain sage on paper towels and sprinkle with salt. Sprinkle meatballs with fried sage and serve with cranberry relish.

*Be sure to use a baking/cookie sheet with a rim to contain any excess liquid.
