Pickled Veggie and Gouda Stuffed Turkey Burgers

Lemon Goat Cheese Stuffed Peppers
16 to 20 mini peppers*, halved and seeded
1 (8-oz.) log soft goat cheese
1/4 cup plain nonfat Greek yogurt
1½ tbsp. fresh lemon juice, divided
1 tsp. finely grated lemon zest
Freshly ground sea salt and pepper to taste
2 cups baby arugula
1 tbsp. extra virgin olive oil

Garnish with a bit of lemon zest if you like.

Prep: 15 minutes, Cook: 5 minutes, Serves: 4

1. Place peppers on a baking sheet and broil for 5 minutes or until edges are lightly browned. Let cool.

2. Stir together goat cheese, yogurt, 1 tbsp. lemon juice and lemon zest. Season with salt and pepper and spoon into peppers.

3. Place arugula onto 4 plates and top with stuffed peppers. Drizzle with olive oil and remaining lemon juice.

*Sizes of peppers will vary.
