Lemon and Garlic Chicken Noodle Soup

Lemon and Garlic Chicken Noodle Soup
1 cup chopped onion
3 ribs celery, sliced
3 large rainbow carrots, peeled and thinly sliced
1 tbsp. olive oil
6 cups chicken stock
2 cups shredded rotisserie chicken
1 tsp. dried thyme
1 (10-oz.) package Chefs’ Menu Lemon Garlic Sauce
1 cup whole grain wide egg noodles

Add juices from rotisserie chicken for extra flavor.

Prep: 20 minutes Cook: 1 hour Serves: 6

1. Saute onion, celery and carrots in olive oil in a large pot over medium heat for 10 minutes.
2. Stir in remaining ingredients except noodles and bring to a boil. Reduce heat and simmer, covered, for 40 minutes.
3. Add noodles and cook for 10 minutes more or until tender.

Yummy! I've been recommending this recipe to all my friends! It's an easy to make soup with a great flavor. My hubby thinks it's my best one yet. The Lemon Garlic sauce can be hard to find... it's in the fresh meat section.
