Gluten-Free Crispy Chicken Strips

Gluten-Free Crispy Chicken Strips
4 cups brown rice crispy cereal
1/2 cup grated Parmesan cheese
1 tbsp. Raley’s Chefs’ Menu All-Purpose Seasoning
2 Raley’s Eggs
1-1/2 lbs. chicken tenders
olive oil cooking spray

Prep: 20 minutes Cook: 30 minutes Serves: 4

1. Place brown rice crispy cereal in a large bag and crush with a rolling pin; place mixture in medium bowl.
2. Mix in grated Parmesan cheese Raley’s Chefs’ Menu All-Purpose Seasoning
3. Sprinkle mixture onto a foil-lined, greased baking sheet.
4. Beat 2 Eggs in a shallow dish. Dip chicken tenders in egg, then in cereal mixture, pressing firmly into chicken to coat heavily. Place on baking sheet and sprinkle with any remaining mixture.
5. Coat with olive oil cooking spray and bake for 30 minutes, spraying once or twice more during cooking.
