Pork with Granola Stuffing

Pork with Granola Stuffing
2 tbsp. better-for-you spread or butter
1/2 cup chopped onion
1/3 cup chopped celery
2 cups small cubes rustic bread
3/4 cup granola
1 cup Raley’s Chicken Broth
3/4 tsp. crushed dried rosemary
Raley’s Salt and pepper
4 boneless Raley’s Pork Loin Chops

Vanilla-flavored granola makes a great sweet-savory stuffing.

Prep: 15 minutes Cook: about 1 hour Serves: 4

1. Melt better-for-you spread or butter in a large skillet. Add chopped onion and chopped celery; cook until soft.
2. Stir in small cubes of rustic bread,  granola, Raley’s Chicken Broth and crushed dried rosemary. Stir until liquid has absorbed and season with Raley’s Salt and pepper.
3. Cut a pocket in the boneless Raley’s Pork Loin Chops and spoon some of the stuffing inside each.
4. Cook over medium heat in a grill pan or skillet for 15 minutes on each side or until pork reaches 145°F internally. (If using a grill pan, cook any excess stuffing in a small baking dish at 350°F for 20 minutes. If using a skillet, cook directly in skillet.)
