Almond Cheese with Honey Marsala Pears

Almond Cheese with Honey Marsala Pears
Almond Cheese:
1 (8- oz.) bag slivered almonds
2 cups water
3/4 cup Sunnyside Farms Almond Beverage or your favorite almond milk
2 tbsp. lemon juice
2 tbsp. almond oil
1 tbsp. honey
1/2 tsp. sea salt or to taste

Honey Marsala Pears:
1/4 cup Raley's Brown Sugar
1/2 tsp. cinnamon
3 Bosc pears, halved and cored
2 tbsp. Sunnyside Farms Butter
1/3 cup Marsala wine
2 tbsp. honey
1 tbsp. lemon juice

Almonds make a delicious, ricotta-like cheese. To serve with savory dishes, omit the honey and stir in chopped fresh herbs.

Prep: 30 minutes, Soak/Drain: 24 hours, Cook: 15 minutes, Serves: 6

1. Cover almonds with water and let soak overnight. Drain, then purée in a food processor with almond beverage, lemon juice, almond oil, honey and salt.

2. Pour into a colander lined with 2 layers of cheesecloth and let mixture drain overnight, topping with a heavy bowl to press out liquid. Cover and refrigerate until ready to serve. (May be prepared several days ahead.)

3. Stir together brown sugar and cinnamon in a small bowl. Dredge cut side of pears with mixture. Melt butter in a large skillet over medium heat. Add pears and any remaining brown sugar mixture and cook, cut side down, for 5 minutes or until nicely browned. Add Marsala and cook, covered, for 5 minutes or until pears are tender. Remove pears and stir in honey and lemon juice.

4. Serve pears over a scoop of almond cheese and drizzle with honey mixture in pan.
