Blueberry Syrup

Blueberry Syrup
2 cups fresh blueberries
1 cup water
3/4 cup sugar
4 (1/4-inch thick) slices fresh ginger, peeled
Zest of 1 lemon

Prep: 10 minutes Cook: 30 minutes Makes: about 1½ cups 

Great on waffles, pancakes or even vanilla ice cream.

1. Bring all ingredients to a boil in a small saucepan. Reduce heat and simmer for 30 minutes or until thickened (syrup will continue to thicken as it cools).
2. Let cool slightly, then press through a fine mesh sieve to remove all solids. Cover and refrigerate until ready to serve.
