Salmon Spread with Herbed Crostini

Salmon Spread with Herbed Crostini
10 oz. salmon, skin removed
4 tbsp. olive oil, divided
2 tbsp. chopped chives
1 tbsp. lime juice
1 tbsp. chopped capers
1 shallot, peeled and sliced
1 clove garlic, minced
1/4 jalapeno pepper, minced
Salt and pepper to taste
16 baguette slices
1 tsp. dried thyme
1 tsp. chopped parsley
1/4 tsp. garlic powder

Prep: 10 minutes, Cook: 27 minutes, Serves: 4

1. Preheat oven to 350˚F. Place salmon on a foil-lined baking sheet and bake for 15 minutes. Let cool.

2. Pulse cooled salmon in a food processor until chopped. Place salmon in a medium bowl with 2 tbsp. oil, chives, lime juice, capers, shallot, garlic and jalapeño. Stir well, then season with salt and pepper.

3. Toss baguette slices with remaining 2 tbsp. oil, thyme, parsley and garlic powder; bake for 12 minutes or until golden brown.

4. Serve salmon mixture with crostini.
