Spicy Chipotle Blueberry Ketchup

Spicy Chipotle Blueberry Ketchup
1 pint (2 cups) fresh blueberries
1/3 cup sugar
1/4 cup minced onion
3 tbsp. lime juice
3 tbsp. white or red wine vinegar
2 to 3 tsp. minced chipotle pepper in adobo sauce, plus additional adobo sauce to taste
1/4 tsp. sea salt
1 clove garlic, minced

Prep: 10 minutes Cook: 30 minutes Cool: at least 30 minutes
Makes: about 1 cup

We love this ketchup with sweet potato fries, but it’s also great served on turkey burgers.

1. Bring all ingredients to a boil in a small saucepan. Reduce heat and simmer for 30 minutes or until slightly thickened (mixture will thicken more as it cools).
2. Let cool, then puree in a blender or food processor.* Cover and
refrigerate until ready to serve.

*Use caution when blending hot liquids.
Hold blender lid down with a kitchen towel while blender is running.
