Roasted Blueberry and Beet Brie

Roasted Blueberry and Beet Brie
1/2 cup 1/4-inch cubes red beets
1 tbsp. honey
1 tbsp. balsamic vinegar
1 tbsp. extra virgin olive oil
1 cup fresh blueberries
Freshly ground sea salt and pepper to taste
1 (8-oz.) wheel or wedge Brie (in our Deli)
Snipped fresh basil
24 baguette slices, lightly toasted

Prep: 10 minutes, Cook: 25 minutes, Serves: 8

1. Preheat oven to 400°F and line a baking sheet with foil. Toss beets with honey, vinegar and oil, then place on baking sheet. Roast for 15 minutes, stirring occasionally. Stir in blueberries and roast for 10 minutes more or until beets are tender. Season with salt and pepper.

2. Place Brie on an oven-safe plate; place in oven for 5 minutes to warm and slightly melt.

3. Spoon blueberry beet mixture over Brie and sprinkle with basil. Serve warm with baguette slices.
