Penne Pasta with Salmon and Watercress

Penne Pasta with Salmon and Watercress
1 (16- oz.) package penne pasta
2 tbsp. safflower oil
2 cloves garlic, minced
1 small red onion, thinly sliced
1 lb. salmon, skin removed and cut into 1-inch cubes
2 cups sliced cherry tomatoes
1½ cups torn fresh basil, divided
1 cup chicken stock
1 tbsp. lemon juice
Salt and pepper to taste
4 cups watercress
1 cup grated Parmesan cheese

Prep: 20 minutes, Cook: about 30 minutes, Serves: 8

1. Heat a large pot of salted water and cook penne pasta for 8 to 10 minutes; drain well and set aside.

2. Heat oil in a large skillet; add garlic and onion and cook for 5 minutes or until onions are tender. Add salmon cubes and cook for 5 minutes. Add tomatoes, 1 cup basil, chicken stock, lemon juice, salt and pepper; cook for 3 minutes.

3. Add pasta to skillet and cook for 5 minutes. Add watercress and toss well. Serve with Parmesan cheese and remaining basil.
