Inside Out Battered Shrimp Tacos

Inside Out Battered Shrimp Tacos
1 ripe avocado, peeled, pitted and mashed
1/4 cup Cacique Crema or sour cream
1½ tsp. Tajin Clasico Seasoning, divided
Oil for frying
3/4 to 1 cup Mexican beer
2/3 cup masa harina
24 large peeled and deveined shrimp
8 small romaine lettuce leaves
1 cup Fresh Gourmet Santa Fe Style Tortilla Strips
3/4 cup julienne strips jicama
3/4 cup thinly sliced purple cabbage

We’ve put the crunch of a taco shell in the middle and served this taco in a lettuce leaf, adding extra nutrition and freshness.

Prep: 20 minutes, Cook: 5 minutes, Serves: 4

1. Stir together avocado, crema and 1/2 tsp. seasoning in a small bowl; cover and set aside.

2. Heat 1/2 inch of oil in a medium skillet. Stir together beer, masa and remaining seasoning in a medium bowl to form a fairly thick batter. Dip shrimp in batter and shake off excess. Carefully place in oil and cook for about 2 minutes on each side or until golden brown; drain on paper towels.

3. Place shrimp in lettuce leaves and top with tortilla strips, jicama and cabbage. Serve with avocado crema.
