Salt and Vinegar Sweet Potato Chips

Salt and Vinegar Sweet Potato Chips
3 medium sweet potatoes
1/3 cup malt vinegar
Salt to taste
Nonstick foil
Cooking spray

1 cup mayonnaise
3 cloves garlic, minced
3 tbsp. red wine vinegar
3 tbsp. lemon juice
1/4 cup grated Parmesan cheese
Salt and cracked black pepper to taste

Prep: 15 minutes, Marinate: 15 minutes, Cook: 30 minutes, Serves: 2

1. Preheat oven to 350°F. Cut potatoes into very thin slices and place in a large resealable bag. Add malt vinegar to bag and seal. Let marinate for 15 minutes, then drain potatoes and pat dry.

2. Line a large baking sheet with nonstick foil. Place potatoes in single layer on baking sheet and coat with cooking spray. Sprinkle with salt to taste and bake for 15 minutes. Turn potatoes over, coat again with cooking spray, and bake for 15 minutes more. Remove and place on a cooling rack; sprinkle with salt to taste.

For dip: Whisk together mayonnaise, garlic, red wine vinegar, lemon juice, cheese, salt and cracked black pepper to taste.
