Easter Bunny Cookies

Easter Bunny Cookies
1 cup butter softened
1 cup sugar
1 egg
1 tsp. lemon extract
2-1/3 cups flour
1½ tsp. baking powder
1/4 tsp. salt
Wooden popsicle sticks
Dry Jell-O Gelatin (we used orange, lemon, lime and strawberry)
1 tube White Writing Icing

Prep: 20 minutes, Cook: 8 to 10 minutes, Makes: 16 cookies

1. Preheat oven to 400°F and line 2 cookiesheets with parchment paper. Mix together butter and sugar in a large bowl until fluffy. Stir in egg and lemon extract. Stir in flour, baking powder and salt until well mixed.
2. Make a ball of dough about the size of a ping pong ball and push a popsicle stick into the ball. Put on a baking sheet and flatten to about 1/4- inch thick. Shape small pieces of dough to form bunny ears and press onto head. Be sure ears and head are about the same thickness so cookies bake evenly. Sprinkle cookies lightly with Jell-O.
3. Bake for 8 to 10 minutes or until lightly browned. Let cool on cookie sheets before moving. When completely cool, draw eyes, noses and whiskers with icing.
