Baked Brisket

Baked Brisket
1 tbsp. oil
4 lb. beef brisket (note: our brisket is NOT kosher)
2 cups red wine
1 cup ketchup
1 cup brown sugar
1/2 cup lemon juice
1 tbsp. chopped garlic
1 large onion, chopped
freshly ground pepper to taste

Prep: 15 minutes, Cook: 3 hours 15 minutes (mostly unattended), Serves: 8 to 10

Preheat oven to 350°F. Heat oil in a large skillet until very hot; add beef and brown well on both sides. Transfer to a large baking dish. Stir together remaining ingredients and pour over beef. Cover tightly with foil and bake for 2 hours. Remove cover and cook for 1 hour more or until very tender. Let cool for 10 minutes, then slice thinly against the grain. Skim fat from the surface of the pan juices and serve juices with brisket.
