Rainbow Carrots with Lemon Glaze

Rainbow Carrots with Lemon Glaze
1 lb. rainbow carrots
1 tbsp. butter
1 tbsp. Dickinson's Lemon Curd
Salt and pepper to taste
Peel carrots and slice 1/4-inch thick. Steam for 3 to 5
minutes until crisp-tender; drain and set aside. Melt
butter and curd in a small pan. Stir in carrots and
season to
taste with salt and pepper.

Makes 4 to 6 servings.
