Italian Chicken and Sausage Stew

Italian Chicken and Sausage Stew
1 tbsp. organic extra virgin olive oil
Chicken Breast, Boneless, Skinless cubed
2 Aidells Organic Sun Dried Tomato Sausages sliced 1/4-inch thick
1 large organic yellow onion cut into 1/2-inch dice
1 (28- oz.) can Muir Glen Fire Roasted Organic Diced Tomatoes (in our Natural Foods Dept.)
1/2 cup Bonterra Organic Cabernet Sauvignon or Merlot
2 tsp. organic basil
1 cup organic zucchini diced
organic Parmesan cheese Shredded
fresh organic basil snipped
Hot cooked organic pasta or de la Estancia
Organic Polenta (optional)
Prep time: 15 minutes, Cook time: 45 minutes

Heat olive oil in a large pot. Add chicken and cook for 5 minutes over medium-high heat to brown. Add sausage and onion; cook and stir for 5 minutes more to brown. Stir in tomatoes, wine and 2 tsp. basil; bring to a boil. Reduce heat and simmer, covered, for 30 minutes. Add zucchini and simmer for 5 minutes more. Serve over pasta or polenta, if desired; top with Parmesan cheese and basil.

Makes 6 to 8 servings.
Wine Suggestion
To continue the organic theme, try Bonterra Merlot. Or try pairing with a hearty Chianti.
