Quinoa Salad with Pomegranate, Herbs and Feta Cheese

Quinoa Salad with Pomegranate, Herbs and Feta Cheese
3 cups cooked quinoa
1½ cups fresh pomegranate seeds (arils)
1 cup crumbled feta cheese
1/4 cup chopped parsley
1/4 cup chopped mint
1 clove garlic, minced
1/2 small red onion, diced

1/4 cup lemon juice
1/4 cup olive oil
2 tbsp. red wine vinegar
1 tbsp. lemon zest
2 tsp. Dijon mustard
Salt and pepper to taste

Prep: 20 minute, Serves: 6

1. Combine all salad ingredients in a large mixing bowl. Stir until well mixed.

2. Stir together all dressing ingredients in a small bowl, then mix into salad.

This salad was a big hit at a pre-Christmas dinner party, but that amount of dressing really overwhelmed the salad and made the quinoa too wet. I ended up making more quinoa to mix in and adjust the balance. I strongly suggest that when making this salad, you start by adding just part of the dressing, taste, then add more until you're happy with the taste and texture.
