Chicken with Grapefruit, Watercress & Manchego

Chicken with Grapefruit, Watercress & Manchego
2 grapefruit
3 tbsp. olive oil
4 Raley's boneless, skinless chicken breasts
2 cloves garlic, minced
Salt and pepper
4 cups roughly chopped watercress
4 tbsp. extra virgin olive oil
3 tbsp. rice vinegar
1 small shallot, peeled and minced
1/2 cup shaved Manchego cheese, divided

Prep: 15 minutes, Cook: 20 minutes, Serves: 4

1. Peel and thinly slice grapefruit into rounds.

2. Heat olive oil in a large skillet over medium heat. Season chicken garlic, salt and pepper. Cook in a large skillet for 5 minutes on each side. Remove from skillet and cover; let rest for 8 minutes.

3. Combine watercress, olive oil, rice vinegar, shallot, salt and pepper in a large bowl. Divide grapefruit between 4 plates. Top each with watercress mixture, chicken and cheese.
