Olive Oil Oatmeal Cookies with Dried Cherries

Olive Oil Oatmeal Cookies with Dried Cherries
1 cup California Olive Ranch Extra Virgin Olive Oil
1 cup brown sugar, packed
1 tbsp. vanilla extract
2 eggs
1 cup flour
1 tbsp. ground cinnamon
1 tsp. salt
1/2 tsp. baking soda
1/4 tsp. ground cloves
4 cups rolled oats
1 cup dried cherries

Prep: 12 minutes, Cook: 30 minutes, Makes: 28 cookies

1. Line a baking sheet with parchment paper. Preheat oven to 350˚F. Mix together oil, brown sugar, vanilla and eggs in a large mixing bowl until blended.

2. In a separate bowl, mix together flour, cinnamon, salt, baking soda and cloves.

3. Add flour mixture, oats and cherries to olive oil mixture.

4. Drop in balls on prepared sheet. Bake in batches for 10 to 12 minutes.

seems like an awful lot of oats and not enough flour... I'm making them right now and adding flour

Ok, I finished small batches, adding some flour at a time, and by the time I was on my last batch I had effectively double the flour... and those last cookies turned out best, and pretty good. But I think I'll go back to the traditional oatmeal cookie recipes.
