Carrot and Nut Burgers

Carrot and Nut Burgers
1/2 lb. fresh carrots (about 2 large), cut into 2-inch pieces
1/2 medium onion
2 cloves garlic
1/2 cup breadcrumbs
1/4 cup walnuts
1/4 cup almonds
1/4 cup hazelnuts
1/4 cup pecans
4 tbsp. fresh cilantro
2 tbsp. cornstarch
2 tbsp. lime juice
2 tsp. ground cumin
1/4 tsp. salt
1/2 tbsp. olive oil
Tomato slices
Onion slices

Prep: 30 minutes, Cook: 8 minutes, Serves: 4 to 6

1. Pulse carrots, onion and garlic in a food processor until finely chopped, stopping to scrape down sides of bowl as needed. Add breadcrumbs, nuts, cilantro, cornstarch/lime juice mixture (stirred together until smooth), cumin and salt. Blend until completely mixed, stopping to scrape down sides of bowl as needed. Adjust seasoning to taste.

2. Shape into 6 patties. Heat olive oil in a large skillet over MEDIUM heat. Cook patties for 4 minutes on each side. Assemble burger to your liking.

These burgers were quick, easy and very flavorful! Do cook over medium heat or they'll burn, otherwise. Excellent! My meat loving husband said they were great! Definitely a keeper:)
