Savory Garbanzo Beans with Spicy Yogurt Sauce

Savory Garbanzo Beans with Spicy Yogurt Sauce
Garbanzo Beans:
2 tbsp. coconut oil
2 stalks celery, diced
2 cloves garlic, thinly sliced
1 yellow onion, diced
1 red bell pepper, diced
2 (15.5- oz.) cans garbanzo beans, rinsed
1 (28- oz.) can crushed tomatoes
1 tbsp. dried oregano
Salt and pepper to taste

Yogurt Sauce:
2 cups Straus Family Creamery Yogurt
4 tbsp. lime juice
1 tbsp. smoked paprika
2 tsp. hot sauce
1/4 tsp. cayenne pepper
1/4 tsp. garlic powder
4 slices naan or flatbread
3 tbsp. chopped fresh cilantro (garnish)

Prep: 10 minutes, Cook: 30 minutes, Serves: 4

1. Heat oil in a large pan over medium heat. Add celery, garlic, onions and bell pepper; cook for 5 minutes. Add beans, tomatoes and oregano; season with salt and pepper. Bring to a boil, then lower heat and simmer for 25 minutes.

2. Mix together all yogurt sauce ingredients in a medium bowl.

3. Garnish garbanzo beans with cilantro. Heat naan and serve with garbanzo beans and yogurt sauce.
