Strawberry Candies

Strawberry Candies
3 (3- oz.) packages strawberry Jell-O Gelatin divided
1 (14- oz.) can sweetened condensed milk
1 (7- oz.) bag shredded coconut
1 (6- oz.) bag slivered almonds
1 tsp. almond extract
About 20 toothpicks broken in half
10 to 12 drops green food coloring
Flat leaf parsley leaves
1. Place 2 packages Jell-O, milk, coconut,
almonds and extract in a blender or food processor. Process until very finely chopped. Try turning the machine on and off to make sure it all gets well chopped.

2. Divide mixture into 40 balls and form into small, strawberry-shaped candies. Place on a rimmed cookie sheet.

3. Pour remaining package of Jell-O over cookies. Roll “berries” in the Jell-O until coated on all sides.

4. Place toothpick halves in a small glass bowl with green food coloring and stir with a metal spoon to color them green. Place a small leaf of parsley on the berry top and hold in place with toothpick “stem.” Store in an airtight container in the refrigerator.

Makes about 40 “berries.”
